Method

  • Put the sugar, gum (xanthan or guar) and 1 teaspoon of soy protein into a bowl and mix. Pop it aside for a little while.
  • Put the rest of the soy protein and the water into a mixer and blend. It needs to be whipped at high speed for at least 5 minutes until it's increased in volume and has soft peaks.
  • Add the cider vinegar and vanilla, whip until stiff.
  • Put the mixer on medium speed, start adding the sugar mixture a tablespoon at a time, mixing well between each addition. The mixture will whiten and form stiff peaks.
  • Either drop 12 to 14 blobs of meringue mixture or fill a piping bag and pipe 12 to 14 swirls on the prepared baking tray.
  • Bake (fan bake is best) at 110°C (230°F) for 50 to 60 minutes or until the meringues are firm to the touch.
  • Cool, before removing from oven tray.
  • Makes 12 to 14 halves (6 to 7 joined meringues).
