Vegan mashed sweet potato and carrot

1 cup or 250ml rice milk (nut free) OR More products
1 cup or 250ml almond milk More products

Method

  • Chop the sweet potatoes and carrots into smallish cubes and steam.  
  • Mash the potatoes and cauliflower with the rice or almond milk, nutmeg and maybe a little grated ginger. You can also use stock from vegetables you have steamed or boiled instead of the rice milk, and maybe also add a knob of butter to taste.
