Vegan Fig, Orange, Pistachio and Vanilla Parfait Recipe

This stunning dessert is sure to impress your friends and family, yet it is deceivably simple to make. Alternating layers of fig orange compote and vegan whipped cream deliciously flavoured with vanilla and orange zest. The figs can be substituted with other dried fruits of your choice. There is no added sugar, as the figs give us all the sweetness we need.

Method

  • Roughly crush the pistachios and dry roast them in a dry frying pan until slightly golden, watching them closely so they don’t burn. Set aside.
  • Grate the zest of one of the 2 oranges and remove its pith with a sharp knife. Peel and pith the other orange.
  • Put the oranges and the figs (with any leftover juice, if you soaked dried figs in orange juice) in a high speed blender or food processor and blend until smooth. Set aside.
  • Pour the well chilled vegan cream of your choice in a bowl. Halve the vanilla bean or pod lenghtwise using a sharp knife and scrape its seeds out, adding them to the vegan cream along with the orange zest, and whip until soft peaks form, using a rotary whisk or your preferred whipping device. If using already whipped cream, just gently incorporate the vanilla seeds and orange zest.
  • In 4 pretty tall glasses, alternate layers of fig and orange compote with the orange vanilla vegan whipped cream until you run out of both. Chill. When ready to serve, top with the toasted pistachios.
