Rice Pudding using Agave Syrup in pressure cooker

This rice pudding is sweetened with agave syrup or any other healthy sweetener of your choice, instead of sugar.

You will need

1 tbsp salted butter Available only in our Edinburgh shops More products
1 cup or 200g white short grain rice

1 egg

a quarter of a cup or about 60ml double cream

1 vanilla pod, seeds scraped

about 2 tbsp agave syrup OR More products

about 2 tbsp brown rice syrup

  • Melt the butter in the pressure cooker and add the rice. Stir to ensure it is coated with butter. Pour in the milk and water.
  • Lock the lid in place and bring to pressure. Lower heat and cook for 12 minutes. Release pressure and remove lid.
  • In a small bowl combine the egg, cream and vanilla seeds. Stir in a little of the hot liquid from the pressure cooker then add the mixture to the pressure cooker.
  • Cook uncovered over medium heat, stirring continuously with a wooden spoon, until the rice pudding begins to barely bubble. Immediately remove from heat and allow to cool 10 minutes while stirring occasionally.
  • Stir the sweetener in, adjusting to your taste.
  • Transfer to individual dessert bowls, and place in the refrigerator to continue cooling. Sprinkle with cinnamon right before serving.
