Red Pepper Tapas

4 cloves garlic More products
good quality olive oil More products

Method

  • Either preheat oven to 200c or turn grill to high.
  • Halve the peppers and remove the ends and seeds.
  • Slice peppers into sections so they lie flat, skin-side up and put them to char until skins are black and blistered.
  • Allow them to cool enough to handle and then pull off the blackened skins.
  • Slice more finely now if preferred.
  • Put them into a glass together with a bit of crushed garlic and top up with olive oil to cover the peppers. Season with a pinch of sea salt and freshly ground black paper.
  • Will keep in the fridge for over a week.
