Vegetarian Easy Nut Loaf Recipe

Nut roast is a staple for all vegetarians for a warming family Sunday lunch or dinner, to go alongside potatoes and fresh seasonal vegetables. This nut loaf is quick and easy enough to feature on your weekly menu, whilst tasty enough to be the star of your Christmas or other celebration dinner. Brazil nuts are particularly good in this, as they have a mild sweet taste, but walnuts will work well too, so will your favourite nuts, and peanuts will keep the cost down.

250g walnuts OR More products
250g redskin peanuts More products
about 200g wholemeal bread
300ml water or homemade vegetable stock
1 sachet miso bouillon paste OR More products
1 tbsp miso More products
2 eggs Available only in our Edinburgh shops More products
2 tsp mixed dried herbs More products
coarse ground black pepper to taste More products

Method

  • Put all the ingredients in your food processor and process until well combined.
  • Pour the mixture into a suitable dish and bake for about 30 minutes.
  • Serve with a tasty gravy and cranberry sauce, if you like.
