You will need

50g black olives, pitted More products
25g pine nuts More products
30ml balsamic vinegar More products
45ml extra virgin olive oil More products
2 tablespoons capers, rinsed and finely chopped More products

Method

  • Put the prunes and water into a small pan.
  • Cook on a low heat until the prunes are very soft which takes about 8-10 minutes.
  • Transfer this to a bowl and allow to cool.
  • Once cooled, add the olives, nuts, vinegar, oil, capers and thyme and mix them well.
  • Set the mixture aside for 2 hours to allow the flavours to infuse.
  • Finally add the chives just before serving.
  • This is the perfect paste to add to bruschetta or crostinis or simply use as a condiment with cheese or in sandwiches.
