Method

  • Toast the bread and spread the houmous evenly over two of the slices and on both sides of the third. On one slice of bread, lay half the avocado, rocket and tomato.  Season with pepper, then cover with the middle slice.
  • Pile on the rest of the avocado, rocket and tomato, season again and top with the third slice. Give it a gentle squeeze against the surface to help the filling to settle and prevent an exploding sandwich fiasco.
