Method

  • Put the quinoa into a sieve and thoroughly rinse under running water for a good minute, to remove the saponins that coat the quinoa seeds and that can give cooked quinoa a slightly bitter taste. If you have time, allow the quinoa seeds to soak for 2 to 4 hours to start the germination process and increase the nutritional value. If you are short on time, you can use the quinoa right after rinsing.
  • Preheat over to 180C/350F.
  • Blend all the ingredients in a blender until smooth and creamy. Add more water if needed, as the batter should have a yoghurt consistency.
  • Transfer 1/3 of the mixture onto a round baking tray or a cake tin lined with baking parchment. Makes 3 x 30 cm pizza bases.
  • Bake pizza bases for about 15 mins until lightly golden.
  • Add toppings of your choice and bake your pizzas for about 10 to 15 minutes, depending on your toppings.
  • Extra pizza bases will keep well in the fridge for a few days, or alternatively, freeze them. In that case, defrost them completely before adding your toppings.
