Easy Pumpkin Paleo Pancakes Recipe

Grain free, Wheat free, Gluten free, Paleo approved coconut flour and milk, eggs and delicious pumpkin puree, these Paleo pancakes are a breeze to make. Just put all the ingredients in a bowl, mix, cook, eat ! Great for breakfast, or as a post workout snack.

1/4 cup or about 50g no added sugar pumpkin puree either ready-made, or use steamed pumpkin flesh

1 Tbsp coconut oil, plus extra for cooking the pancakes More products
3 Tbsp coconut milk More products

Method

  • Simply put all ingredients in a bowl and mix with a hand whisk until well combined. The batter will be much thicker that regular pancake batter, but don't worry, that's how you want it to be. You can use melted coconut oil, but solid coconut oil is fine too, as it will break into tiny lumps and melt when cooking the pancakes.
  • Lightly grease a hot frying pan with a little coconut oil, drop a heaped tablespoon batter at a time, slightly flattening and spreading to a pancake size and shape with the back of the spoon.
  • Continue until you run out of pancake batter. Serve piled on a plate, drizzled with honey or your favourite liquid sweetener, and sprinkled with some pumpkin seeds and desiccated coconut.
