Dairy Free Rice Pudding

This pudding could be served topped with fresh fruit, fruit puree or why not stir through some sultanas or other dried fruit. Wheat and gluten free. Vegan.

Method

  • Place the coconut milk in a medium sauce pan and heat gently until it comes to a simmer.
  • Add sugar to taste and stir until dissolves then add the cooked rice and bring gently to the boil.
  • Reduce the heat and simmer until it thickens.
  • Do not allow it to dry out too much.
  • Remove from the heat and stir in the vanilla.
