Baked Cherry Tomatoes Recipe

Lycopene is absorbed best into the body from cooked tomatoes, so things like baked tomatoes, tomato puree and ketchup are ideal sources.

Method

  • Preheat oven to 200 deg cel, gas mark 6
  • Wash and dry the cherry tomatoes, taking care not to pull off the vine.
  • Place the tomatoes in an oven proof dish and then with a sharp knife slice them across the centre, but only go as deep as about one third down the depth of the tom. Slightly widen each slit with a knife.
  • Drizzle the olive oil over the toms and then the balsamic vinegar, making sure that plenty of the balsamic goes into each slit.
  • Bake for 10mins, then serve still attached to the vine.
