Agave Almond Brickle

This is delicious spooned over vanilla ice-cream, or when cooled stirred into your choice of ice-cream and placed in the freezer overnight.

You will need

1/4 cup agave syrup More products
2/3 cup flaked almonds More products
1/4 tsp or less salt More products
6 tbsp cream Available only in our Edinburgh shops More products

Method

  • Melt the butter and agave syrup in a heavy bottomed saucepan over a med-high heat.
  • Add the almonds and stir constantly for approx 5-6 mins
  • The mixture will darken to a rich, golden brown caramel.
  • Do not overcook or leave unattended as the mixture will burn easily.
  • Remove the mixture from the heat and still stirring add the salt and stir the cream in slowly.
  • The mixture will splutter and steam so use a long handled spoon.
  • Leave to cool and add to ice -cream as above.
