Gluten Free Tortillas Recipe

You will need

100g cornflour More products
25g gram (chickpea), flour More products
2 tbsp Tapioca flour More products
1/2 tsp sea salt More products
2 organic eggs Available only in our Edinburgh shops More products
360ml water
oil for brushing the frying pan More products

  • Mix together flours and salt in a bowl.
  • Beat eggs into flour mixture until smooth, then slowly beat in the water.
  • Cover bowl with clingfilm and leave in fridge for 30 mins.
  • Heat a medium sized frying pan until very hot.
  • Brush pan with a little oil.
  • Pour in sufficient batter to cover the bottom of the pan.
  • Let the batter cook over a high heat until the bottom of tortilla is golden brown.
  • Flip the tortilla over and cook for 30 seconds.
  • Lift tortilla on to greaseproof or parchment paper and cook remaining batter.
  • Stack cooked tortillas using parchment paper to separate.
  • If necessary, cool before placing in fridge or freezer until ready to use then reheat.
