Gluten Free Vegan Chocolate Spiced Cookies

This Valentines Day, make your Beau (or your Belle) a sweet treat the vegan way. They would also be great as Christmas cookies.

You will need

1 1/2 cups or 180g brown gluten-free flour More products
1 tbsp cocoa powder More products
1 tsp ground ginger More products
1 tsp ground cinnamon More products
1/4 tsp ground cloves More products
1/4 tsp ground nutmeg More products
1/2 cup or 120g dairy free spread Available only in our Edinburgh shops More products
1/2 cup or 100g light muscovado brown sugar OR More products
1/2 cup or 100g xylitol More products
1/4 cup or 80g molasses

1 tsp gluten-free baking soda dissolved in 2 tsp boiling water More products

  • Whisk together the flour, cocoa powder and spices in a small bowl and set aside.
  • Beat together the margarine and brown sugar or xylitol. Add the molasses and mix well.
  • Add half of the flour mixture and the baking soda mixture and combine well. Add the rest of the flour mixture and mix again.
  • Cover and chill for at least one hour. Pre-heat the oven to 325 degrees F or 170 degrees C.
  • Spoon dough into 1 1/2 inch balls and bake 12 to 15 minutes, until the surface of the cookies start to crack slightly.
