You will need

125g fresh sweetcorn (or unsalted and unsweetened frozen or tinned) More products
1 tsp good quality veg oil (or butter) More products
5cm piece of leek well washed and sliced

1 potato, chopped More products
1 bay leaf More products

  • Heat the oil or butter in a pan over a medium heat.
  • Gently fry the leek and red pepper until soft about 5 mins.
  • Add the milk, sweetcorn, potato and bay leaf and bring to the boil.
  • Reduce the heat and simmer for 10 mins or until the potato is tender.
  • Add the cream, remove the bay leaf and blend briefly in a food processor.
  • Serve with crusty bread or fingers of cheese on toast.
