Produced by female members of the Indigenous-led CENCOIC cooperative in Colombia?s Cauca region, this lot reflects careful harvesting and processing. Cherries are picked at peak ripeness, pulped the same day, then fermented for 12?20 hours before being washed and dried to 10?12% moisture content, preserving clarity and sweetness in the final cup.
