About Organic Garlic Purple Castano
Organic Purple Castano Garlic is a medium-large sized variety, with a balloon-shaped head, covered in papery white skin with purple streaks in it. It is a fairly strong, spicy garlic with a pungent aroma. This variety is ideal to enhance the flavour of stews or garlic based spreads. Originally it is white, the drying process causes the purple colours to emerge.
Studies of garlic have shown links with improved blood circulation, healthier cholesterol levels and lower blood pressure, all of which reduce the risk of cardiovascular disease. Garlic can also be useful in helping reduce salt intake as garlic's strong flavour can replace the salt used for flavouring in cooking (eating less salt is important in reducing high blood pressure).
Garlic is widely used in various cuisines, often paired with onion, tomato or ginger. Mixing garlic with egg yolks and olive oil produces aioli. Yoghurt mixed with garlic and salt is a common sauce in Eastern Mediterranean cuisines. Try drizzling a little oil over a whole bulb (with the top cut off) and roasting it in the oven, then simply squeeze all the goodness from the bulbs.
