Marzipan Chocolates Recipe

I had the brilliant idea of making these Marzipan filled Chocolates after making my Christmas cake. I had made my own marzipan and was left with some after decorating the cake. Marzipan and chocolate really are a delicious pairing, and you can of course make these any time of the year, and use store bought marzipan for a more speedy preparation. The chocolate is a basic fail-proof raw vegan recipe, absolutely delicious on its own too, if you don't have any marzipan, or if you want a nut-free treat.

Method

  • Make sure your chocolate moulds and all other utensils are perfectly clean and dry to avoid the chocolate separating.
  • Prepare a bain-marie by placing a bowl over a pan of simmering water. The bowl shouldn't touch the water, and also ensure that no water gets inside the bowl.
  • Grate or roughly chop the cocoa butter and put it along with the coconut oil in the bowl over the bain-marie. Allow to melt slowly, keeping the heat low.
  • Once the cocoa butter has melted, add the cacao powder and stir using a fork or a whisk.
  • Now add 1 tablespoon of your choosen liquid sweetener, mix thoroughly and taste.
  • If you would like your chocolate sweeter, add more sweetener, about a teaspoon at a time. Remember that the marzipan is sweet too.
  • Now make your chocolates : Break off tiny pieces of marzipan and place them in your chocolate mould, then top with your prepared chocolate using a spoon to pour in.
  • If you want the marzipan pieces to be completely hidden, start by pouring a tiny bit of chocolate into each mould section, just enough to completely cover the bottom of the section. Place in the fridge for 15 minutes to set, then add the marzipan chunk, and finally chocolate to fill.
  • Place the chocolates in the fridge for about an hour to set.
  • The marzipan chocolates will keep in the fridge for several weeks.
