Strawberry and Cherry Cream

Cherries and strawberries are both in season in summer. This easy recipe combines them with cream and a touch of Pimms for a perfect summery snack.

You will need

Enough cherries AND Available only in our Edinburgh shops More products
fresh strawberries for 4 people Available only in our Edinburgh shops More products
150ml double cream Available only in our Tollcross shop More products
1 tablespoon (15ml / ½ ounce) sugar More products
4 sprigs fresh mint (optional)

  • Remove the stalks from the cherries. Wash well.
  • Stone the cherries by cutting in half to remove it, or use a cherry stoner.
  • Wash the strawberries. Remove the green stalk. Slice them to your own taste!
  • Unless the cherries and strawberries are really sweet, put them in a bowl and sprinkle the sugar over it, add the Pimms or brandy and mix.
  • Leave for around an hour at room temperature.
  • This allows the juices to be released, to form a sauce.
  • Whip the cream until it forms soft peaks.
  • Spoon over the fruits and serve with the sprig of mint and a few strawberries to garnish.
  • Eat!
