French Black Truffle Omelette Recipe

20g fresh black summer truffles More products
salt and pepper to taste
about a tbsp good quality olive oil

Method

  • If you can plan ahead, the day before, put the whole eggs and the truffles in an airtight glass jar. The truffle aroma will permeate through the egg shells. This step is optional, but will give you a deliciously fragrant omelet.
  • The next day, beat the eggs, season with salt and freshly ground black pepper to taste.
  • Shave or slice the truffles very thin, set aside.
  • Put the oil in a pan. When the oil is hot, pour the eggs and cook for a couple of minutes.
  • When almost done on one side, add the truffles shavings and slide the omelet off the pan onto a plate, folding the omelet in two.
  • Serve warm with a piece of fresh french bread.
