Flourless Gluten Free Chocolate Cake Recipe

This chocolate cake does not use any flour or any grain, so it is naturally gluten-free. Serve directly from the pan, as the cake is impossible to get out of the dish in one piece ... Why not reduce the quantities and cook in a small heart shaped dish this Valentine's Day ?

6 eggs, whites and yolks separated

Method

  • Preheat your oven at 180C.
  • Gently melt the butter and the chocolate using a bain-marie : put the butter and chocolate together in a medium sized bowl. Place this bowl in a pan containing some water, enough to reach the level of the chocolate and butter, but not so much that it overflows into the bowl containing the butter and chocolate.
  • Whisk the egg yolks and the sugar until the mixture turns white.
  • Incorporate the melted butter and chocolate mixture.
  • Whisk the egg whites and gently fold them into the chocolate mixture.
  • Pour into a pie dish and bake for about 20 minutes.
  • The cake will rise and then fall again, leaving a raised crust on the sides of the dish.
  • Serve warm or cold, directly in the pie dish, with some whipped double cream maybe.
