Method

  • Preheat oven: 200 degrees cel, gas 6.
  • Mix the flour, fat, mustard and cayenne together until it looks like breadcrumbs.
  • Add the cheddar and knead the mixture into a soft dough.
  • Turn onto a lightly floured surface and knead until the dough looks smooth.
  • Place the dough in a plastic bag and refrigerate for 30 mins - 1 hr.
  • Roll out dough on a lightly floured surface to approx 3mm thick and cut into shapes with cookie cutters. Use all the dough.
  • Line baking trays with non-stick baking parchment and place the biscuits on them.
  • Sprinkle the biscuits with grated hard cheese and poppy seeds.
  • Bake for 10-12 mins, until golden. Place on a wire rack to cool.
