Carnival Squash with leftovers

Steam-baked carnival squash with whatever you have handy in the way of stews, casseroles, rice or risotto dishes etc.

Method

  • Slice the squash in half.
  • Fill the bottom of a baking dish with water (bout 0.5cm), place the squash halves in, cover with foil and bake until the squash is tender, about 30 minutes.
  • Plain squash is great but you could bake it with butter and maple syrup and sprinkle with a bit of salt if you like.
  • Let the squash slightly, spoon out the seeds and fill the centres with a couple of tablespoons of your chosen filling.
