Caraway Glazed Carrots Recipe

Carrots go really well with caraway. Maybe that is because they are actually from the same family ? Use baby carrots, regular sized carrots, rainbow carrots or purple haze carrots. True Christmas dinner stars.

Method

  • Wash and peel the carrots. If using baby carrots, you can leave them whole, but cut larger ones into medium sticks.
  • Place the carrots and the bay leaves in a steamer basket and steam for about 5 minutes or until softened. Alternatively, you can cook the carrots in boiling water, but steaming will preserve their flavours better.
  • Put the caraway seeds in a frying pan and dry-fry them for about a minute over low to medium heat. Remove from the heat and set aside to cool.
  • Place the seeds in a mortar and grind them roughly using a pestle.
  • Melt the butter / heat the olive oil and honey, if using, in a pan. Add the ground caraway seeds and the steamed carrots.
  • Toss the carrots in the honey and caraway butter, season with sea salt flakes and freshly ground black pepper, and cook for a couple of minutes.
  • Mix in the parsley and serve.
  • You can steam the carrots and roast and grind the caraway seeds ahead of time.
