About White Cabbage Kimchi
Just as punchy, extra crunchy. Eaten Alive's classic kimchi blend with a white cabbage base.
Many of Eaten Alive products begin life in the same way: vegetables, fruits and chillies are salted and then fermented at cool room temperature for up to six months - readiness is decided based on taste and acidity.
Then ferments are moved into cold storage to slow down the fermentation process while keeping the good bacteria - responsible for a lot of the finished depth and nuance in flavour - well and truly alive.
