About Wild Pied Bleu Mushrooms

It is the blue stem that gives this mushroom the name Pied Bleu, meaning Blue Foot. They are found commonly growing in the wild in the UK on permanent pasture from October to December. They can measure up to 100mm in diameter with stems as long as 80-90mm. Pied Bleu have a strong fragrance and a distinctive flavour. They can be used in both sweet and savoury dishes. Pied Bleu go particularly well with strongly flavoured vegetables such as onions and leeks. Also called Blewit mushrooms, these are classic mushroom with a deliciously rich flavour. A real treat for mushroom lovers. delicious simply fried in butter and served with rustic bread. Mushrooms have zero fat and more protein than any vegetable except soybeans. Research at Penn State, U.S.A shows that after five hours exposure to UV light, one serving of even white button mushroom contains 869 percent of the recommended daily amount of vitamin D. Mushrooms are rich in minerals, such as phosphorus, potassium and zinc, and are the only item in the produce department with any appreciable selenium.
