Whole chia seeds absorb fluid well, so for a delicious chia raw pudding try soaking some in almond milk and top with diced fresh fruit. They can also be ground up, combined with water and used as an egg substitute. Ground chia seeds also make a very good binding agent and can be used to thicken sauces.

Chia seeds are grown in a number of different countries, including Argentina, Mexico, Bolivia, Guatemala, Paraguay, and Peru.
