Based in Portobello (just outside Edinburgh on the east coast of Scotland), Pickled in Scotland were set up by Danya Caceres to use locally grown and produced fruit in delicious Scottish cordials, fruit drinks and fruit cheeses.
Danya was working as a jam cook on a local fruit farm when she first started out with Pickled in Scotland. She spent time carefully developing and testing her recipes and the products are now available in local shops, cafes and farmers’ markets. The ethos is to have minimally processed fruits, locally sourced, with as much nutrition and taste packed in.
Fruit cheeses don’t actually contain any cheese! Traditionally, many fruits were saved for eating through the unforgiving winter months, by preserving ripe fruit with sugar in the form of a ‘cheese’ round. The fruit cheese was then wrapped and popped in the larder to mature and eaten in lean times when fruit was scarce.
All of the fruit in Pickled in Scotland’s products comes from farms across Scotland or is foraged seasonally. Obviously this means that different flavours are available at different times of the year. In the lead up to Christmas they are offering their core flavours of Gooseberry, Plum and Crab Apple along with the seasonally available Pear and Hedgerow Fruit Cheese with Elderberries and Blackcurrant.
Made in small batches to ensure excellent flavour, fruit cheeses are an ideal addition to anyone’s cheese board. Try scattering a few nuts or rose petals for a truly impressive spread and marvel at just how quickly your friends can munch through goats cheese and gooseberry, stilton and plum or apple fruit cheese and just about anything!
