About Organic Aubergine

Aubergines are a good source of fibre and folic acid. The colour of the skin is a result of the presence of anthocyanins (compounds with antioxidant properties.) Although often associated with warmer, more exotic lands, the striking looking aubergine is widely cultivated in Britain. Its subtle and distinctive combination of textures and flavours - smooth, fleshy, creamy, smoky - make it a versatile and beguiling component of many great dishes.

These are decent aubergines, shiny and firm. Excellent in ratatouillie

I was never very keen on Aubergene until I tried it in the vegetable casserole I found in the recipes on this site - now I wouldn't leave it out for any reason.

Macsween's Aubergine and Haggis Towers with Tomato Concasse Recipe

Summary: This impressive yet really easy dish pairs a hero of traditional Scottish cuisine with a tian, which is a french specialty made by arranging slices of tomato, aubergine, courgette and sometimes mozzarella or goat cheese, in a baking dish, and baking until golden and delicious. We make the towers here with aubergines, veggie haggis and mozzarella, but feel free to use tomatoes, red onion rings, courgettes or goat cheese instead of the mozzarella. Thanks to Macsween, we have vegetarian haggis !

Vegan Turkish Warm Aubergine, Courgette and Peppers Salad Recipe

Summary: Mediterranean cuisine is renowned for it's abundance in vegetables and olive oil. This vegan, gluten free Turkish inspired warm aubergine, courgette and peppers salad is a great example. A bit like a sautée salad if you wish, this recipe takes minutes to make and is guaranteed to become a family favourite. Great as a light lunch or dinner, or served with a veggie burger at home or at a barbecue. Try adding some pre-cooked chickpeas or white beans for a more substantial dinner.
