Ingredients: 225g silken tofu; 1 small onion finely chopped; 1 tbsp sunflower oil; 1 clove garlic crushed; 1 organic lemon, zest and juice; 5 tbsp soya milk; 1 tbsp shoyu; 1 tbsp fresh sage chopped; 125g cooked broad beans; salt; ground pepper; lemon zest for garnish

Method

Gently saute the onion until soft, then cool
Drain the silken tofu and place in a blender.
Add the lemon juice, half the zest, garlic, soya milk, shoyu, sage and broad beans.
Blend to desired consistency.
Season to taste serve garnished with lemon zest.
Serve with raw vegetable crudities.
