Ingredients: 25g butter; 1 large onion, chopped; 1 tbsp freshly chopped parsley; 15g plain wholemeal flour; 150ml milk; 225g mixed nuts, chopped; 1 tsp tabasco sauce; 1 tbsp tomato puree; 175g fresh breadcrumbs; 1 free range egg, beaten; freshly ground black pepper

You will need

175g fresh breadcrumbs

Method

Melt the butter in a pan, add the onion and parsley and fry gently until soft.
Sprinkle over the flour and cook stirring for 1-2 mins.
Gradually add the milk, little by little, stirring all the time.
Continue to cook until the sauce thickens.
Add the remaining ingredients and mix well.
Cool slightly.
Preheat the grill to high.
Divide the mixture into 8 portions and with floured hands form each portion into a ball, then flatten with the palm of your hand to form burgers.
Place under the grill and cook for 4 mins on each side
Serve hot.
