The sweet of the prunes combines magnificently with the cheese.

Method

Bake the pastry shells until golden at a medium temperature on a greased baking sheet.
In a mixing bowl combine the ricotta, grated parmesan cheese, herbs, seasonings and diced prunes.
Cool the pastry shells then fill them with the mixture.
Decorate the quiche with thinly sliced avocado and slivered almonds.
Give a squeeze of lemon and garnish with remaining herbs.
This is a terrific snack wherever you are.
