Make your own vegetarian or vegan gravy in minutes this Christmas. Simply replace the wheat flour with rice flour or gluten-free flour of your choice, and replace shoyu soy sauce with tamari to make your gravy gluten-free. The mixed peppercorns really balance the flavours, but you can use black peppercorns too.

Method

Gently heat the butter or olive oil in a saucepan.
Add the flour and stir continuously over low to medium heat until the flour browns.
Carefully add the water or stock, stiring until slightly thickened.
Simmer on medium to high heat for about 10 minutes or until you reach a lovely gravy consistency.
Add the shoyu or tamari and season with freshly ground mixed peppercorns to taste.
