About Organic Chopped Tomatoes

Organic Chopped Tomatoes from Suma. Simply organic tomatoes and organic tomato juice with no added sugar. No kitchen cupboard is complete without these. A staple of Italian cooking they're useful for a range of sauces, casseroles and soups. Try adding to onions, beans and herbs for a bean stew to warm yourself in the winter, or make a cold gazpacho for a refreshing summer meal.

Tomatoes contain high amounts of phytonutrients including flavonols, carotenoids and glycosides which tackle harmful free radicals that damage tissue in the body. Cooked tomatoes are the best source of the carotenoid pigment lycopene. Studies suggest it can help prevent prostate, lung, and stomach cancers. Tomatoes are an interesting exception to the rule that cooking food reduces or destroys valuable micronutrients: lycopene is better absorbed when it has been heated, either during processing or cooking, (the heat turns the molecule into more useful isomers).

Tomatoes also provide significant amounts of bone-strengthening vitamin K, and some research suggests that lycopene also supports bone health. Many studies link tomatoes with heart benefits, the antioxidant vitamins C and E in them, along with lycopene, appear to slow down the processes that would eventually cause heart disease. Additionally, tomatoes are an excellent source of biotin and beta-carotene, a good source of manganese, copper and dietary fibre and also provide some iron and vitamins E and B6.

Sometimes I feel guilty opening a tin of these organic chopped tomatoes, but they make a tasty sauce and I believe that they are just as good for you as the fresh ones.......

I love Suma, they're organic range is good and the food is always high quality. We have these in the house pretty much permanently. Pasta sauces, pizza toppings, bean stews, minestrone and even on one hot day - gazpacho!

Moroccan Vegan Harira Soup Recipe

Summary: Harira is a very popular soup in Morocco and in all of the Maghreb, where it is often eaten to break the fast every night during the Ramadan, the Muslim month of fasting. Harira is hearty and satisfying thanks to the chickpeas, lentils and pasta. It is usually made with very thin, angel hair pasta, but I used orzo, a tiny rice grain - like pasta. Harira is unbelievably fresh and flavoursome thanks to the fresh herbs and the fresh ginger, the cinnamon makes it somewhat sweet, and finally, the saffron just makes it out-of-this-world. Yet, Harira is childishly easy to make. The soup can be eaten on its own or with couscous.
