About Chipotle Aquafaba Mayonnaise Vegan
At Rubies in the Rubble we make delicious condiments from surplus ingredients that would otherwise go to waste. Our new mayo tastes just like the real thing, but is made without an egg in sight, so vegans can enjoy it too.
To make this smooth, creamy mayo, we work with hummus producers to collect 'aquafaba', the protein-rich water left over from cooking chickpeas which would otherwise be thrown away. In other words, less waste, more taste.
