About Organic Black Peppercorns

An essential ingredient in so much cooking, you shouldn't be without them. Black peppercorns are the most popular choice of pepper for good reason.

Black pepper is produced from the still-green unripe berries of the pepper plant. The berries are cooked briefly in hot water, both to clean them and to prepare them for drying. The heat ruptures cell walls in the pepper, speeding the work of browning enzymes during drying. The berries are dried in the sun or by machine for several days, during which the pepper around the seed shrinks and darkens into a thin, wrinkled black layer. Once dried, the spice is called black peppercorn.

There are some very good recipes on this site. I have sometimes been disappointed in the past buying peppercorns from the supermarket as they can seem to be rather 'tired'. I never thave that problem with organic peppercorns from Real Foods.

Summary: Preserved lemons give this salad a lovely Middle Eastern touch. They are very salty, though, and so are feta or halloumi, so don't salt the beetroots.
