Ingredients: 60g short grain brown rice cooked; 60g millet cooked; 1 medium red pepper finely diced; 1 medium yellow pepper finely diced; 2 celery sticks; 4 spring onions finely diced; 2 med tomatoes skinned and fineld chopped; 60g walnuts chopped OR; 60g cashews chopped; 2 tbsp olive oil; 1 garlic clove crushed; 1 tbsp lemon juice; 3 tbsp parsley chopped; 2 tbsp mint chopped; freshly ground pepper

Serve as a main course or take to work for lunch.

Method

Combine the rice and millet in a bowl and mix in the peppers,celery,spring onions,tomatoes and nuts.
In a separate bowl mix the oil, garlic, lemon juice and herbs.
Season to taste with the pepper.
Add the dressing to the salad and mix well.
