Mushroom Mapo Tofu

This easy stir-fry is packed with crispy tofu, fragrant garlic, and a bold, spicy sauce. It comes together in just 15 minutes, making it perfect for a quick and satisfying meal. Serve with jasmine rice or noodles for a takeout-style dinner at home!

You will need

2 tbsp oil More products
1 garlic clove, finely chopped More products
1.5cm piece ginger peeled & grated More products
1red chilli, deseeded and finely chopped More products
30g dried shitake mushrooms More products
splash of chilli sauce (depending on how hot you want it) More products
1 tbsp dark soy sauce More products
1 tbsp rice wine (or rice mirin as substitute) More products
250ml vegetable or mushroom stock More products
1tbsp rice vinegar (or wine vinegar) More products
2 tbsp soy sauce More products
1  tbsp cornflour More products

Method

  • Cover mushrooms with hot water and put to the side.
  • Drain the tofu and tap with kitchen towel to get rid of moisture. Slice into small chunks.
  • Mix all of the sauce ingredients together in a jug.
  • Heat a wok over a high heat and drizzle in oil. Add tofu and fry for 1 minute. Add garlic, ginger and chillies and stir for a few seconds. Drain the mushrooms, add to the pan and stir-fry for a few seconds. Add the chilli sauce, soy sauce and rice wine or mirin. Pour in the sauce ingredients, stir everything to combine, and bring to the bubble, cooking for 1 min.
  • Decorate with spring onions and serve with jasmine rice or noodles.
