Hellenic Sun Extra Virgin Olive Oil is produced in Crete from indigenous Koroneiki olives. The high quality of Cretan Extra Virgin Olive Oil is widely acknowledged, and this superb oil certainly lives up to the reputation. Summary: Ratatouille is a traditional French mixed vegetable stew, from the region of Nice, in Provence. Onions, garlic, tomatoes, bell peppers, courgettes and aubergines are gently stewed together until soft and juicy. Be mindful not to cut the vegetables too small, about 1 inch cubes (2,5cm) is great to make sure the vegetables keep their structure and don't go mushy.
