About Dark Raw Cane Muscovado Sugar

Also known as "Barbados sugar" or "moist sugar", Muscovado is very dark brown and slightly coarser and stickier than most brown sugars. Unlike most other brown sugars, which are made by adding molasses to refined white sugar, Muscovado takes its flavour and colour from its source, sugarcane juice. It offers good resistance to high temperatures and has a reasonably long shelf-life. It is commonly used in baking recipes and making whisky. Muscovado sugar can be used in most recipes where brown sugar is called for, by slightly reducing the liquid content of the recipe.

Customer reviews

I love using muscovado sugar in baking - it adds a really good falvour particularly to fruit cakes and carrot cakes.

Wholegrain Spelt Fruit Carrot Cake Recipe

Summary: This carrot cake uses sprouted wholemeal Spelt flour rather than plain wheat white flour, for enhanced nutrition. The other health boosting secret ingredients in this carrot cake are the bananas and the dried fruits, which help reduce the amount of sugar needed. Also, the bananas make the cake really moist ; it keeps fresh in an airtight tin. The cake is quite indulgent, so small slices are great – it would easily serve 20. Leave the sugar out altogether, if you didn’t want a very sweet cake. If you want a healthier cake with a lower fat content, skip the icing. If you do make the icing, but you want to avoid food colouring, or you don't have a piping bag, you could simply decorate the cake by arranging grated carrot shreds in a pretty pattern on top of the white icing.

Real Foods Vintage Christmas Cake Recipe

Summary: This is our Vintage Christmas Cake recipe, that we used to give out to customers in our stores in the late 70s. Many traditional Christmas cake recipes recommend maturing the cake over 2-3 months, and this one is no exception, although the cake is delicious to eat right away as well. But many recipes are made with a whole host of ingredients that modern bakers today can’t use, be it for health or ethical reasons, such as wheat (containing gluten), or dairy. Our vintage Real Foods recipe allows you to cater for a modern world full of food intolerances and ethical choices that weren’t so prevalent even just a decade ago. Don't just follow this recipe ... Be adventurous and creative ... use coconut, chestnut flour, cashews, hazels, pecans, sunflower or sesame seeds, apple rings or peaches or pears ... just remember to keep proportions of dry goods and liquids correct, and do share your favourite variation with us. HAVE A MERRY CHRISTMAS AND A HAPPY HOGMANAY
