About Organic Onions

What would a kitchen be without the distinctively pungent smell and taste of onions filling out the flavours of almost every type of cuisine imaginable? Onions are endlessly versatile and an essential ingredient in countless recipes. Native to Asia, these underground bulbs are prized all over the world for the depth and flavour that they add to savoury dishes. Dry onions are fully matured, with juicy flesh and dry, papery skin and have a pungent flavour that becomes wonderfully sweet upon lengthy cooking. Medium to large in shape, they have a strong flavour and are good for stuffing or baking; only use raw in salads if you want an assertive onion flavour.

Onions are a very good source of vitamin C, chromium and dietary fibre. They are also a good source of manganese, molybdenum, vitamin B6, folate, potassium, phosphorus and copper.

Onions, like garlic, are members of the Allium family, and both are rich in powerful sulphur-containing compounds, beneficial phytonutrients and antioxidants that are responsible for their pungent odours and for many of their health-promoting effects. There is extensive evidence linking onions to reducing your risk of several common cancers.

Raw Pickled Spiced Onions Recipe

Summary: Pickled onions are so easy to make ! I pickle them whole if I am planning to eat them in a week or two, at least, but for pickled onions ready to eat overnight, I pickle them sliced. Many people boil the vinegar and add sugar. I have found over the years that if I soak my onions in salty water overnight, it works just fine with raw room temperature vinegar. Also, I don't add any sugar, as it is healthier. If you usually buy pickled onions with sugar in them, please try this recipe, I promise you will not miss the sugar at all ! As easy as 1-2-3. 1- Soak the onions in brine overnight. 2- Rinse, drain, put in a jar with spices, if using, and wait overnight. 3- Eat in salads, sandwiches, barbecues, etc.

Vegan Lemon Ginger Carrot Soup Recipe

Summary: Just like our Lemon Ginger Carrot soup, but made vegan by using olive oil or coconut oil instead of butter, this is perhaps the best carrot soup in the world! Everybody loves it, children and grown-ups alike! Try it for yourself: Take a modest carrot soup, add lemon rind and fresh ginger root and be impressed. I like to serve my soups with a dollop of vegan cream, but the ground lentils make the soup ultra-creamy, so I happily skip the cream for this one. Gluten Free. Serves 4 as a starter or 2 as a soup dinner.
