Shiitake and Tofu Stir Fry

This is a wonderfully wholesome tasting dish. The subtle smoky flavour of Shiitake Mushrooms combined with the goodness of Organic Tofu makes this a hearty and healthy recipe for all the family. For a gluten-free dish, be sure to replace the shoyu sauce with gluten-free tamari.

cornflour
shoyu sauce
25g shiitake mushrooms (rehydrated 1 hour before cooking)		More products
1 red pepper (sliced into strips)		More products
2 spring onions (sliced into strips)	Awaiting stock	More products
organic brown rice ramen		More products
2 tablespoons sesame oil		More products

Method

Drain the tofu and gently squeeze out the excess water with some kitchen towel.
Cut the tofu into cubes and coat lightly with the cornflour.
Fry the tofu in the sesame oil in a pan until golden brown.
Meanwhile, cook the ramen as instructed on packet, drain and put to one side.
Remove the stalks from the shiitake mushrooms and add to the tofu (add extra oil if necessary).
After approx 1 minute, add the shoyu to taste.
Place stir fry on top of the ramen noodles and serve.
