Valentine's Raw Vegan Chocolate Bark Recipe

Raw chocolate bark is simply a thin layer of raw chocolate covered with various toppings. Variations are endless. You could simply pour the still liquid raw chocolate onto a tray and break into chunks once set, or like I do here, use a silicon heart mould. In this case, the chocolate heart would be a real show stopper if served with tea and coffee at a dinner party, or on Valentines Day.

Method

  • Get all your toppings out : coconut chips, mulberries, goji berries, shelled hemp and bee pollen if using. You will need a large handful of each. Also prepare a perfectly clean and dry tray or mould to make your raw chocolate bark in.
  • To make the raw chocolate, gently melt the cacao butter, being careful not to overheat it. Add the raw cacao powder to the melted butter and mix until smooth.
  • I prefer not to sweeten my raw chocolate barks, as I find that the sweetness of the dried fruits is enough. But if you would like to, please add sweetener, 1/2Tbsp at a time.
  • Pour your chocolate onto the tray or in the mould. You want a thin even layer, about 20 to 50mm, depending on how thick you would like it to be.
  • Distribute the toppings all over the surface, ideally starting with the biggest ones : coconut chips, then mulberries, then goji berries, then hemp seeds and bee pollen.
  • Pop in the fridge to set. Once set, serve whole of broken into chunks.
