You will need

1 tbsp olive oil More products
1 large onion chopped More products
2 green or red chillies deseeded and finely chopped More products
1 tsp cumin More products
1 tsp tumeric More products
2x400g cans chickpeas

1 tsp fresh lemon juice More products

Method

  • Heat the olive oil in a large saucepan and gently fry the chopped onion until it is softened but not browned.
  • Add the chillies, cumin and tumeric and stir fry for approx 30 seconds, avoiding letting the spices burn.
  • Add the chickpeas, chopped tomatoes and freshly ground pepper and simmer for approx 10 mins.
  • Add the lemon juice and cook for a further 2-3 mins, serving immediately.
  • Serve with salad, steamed vegetables or rice.
