Racuszki or East European Fluffy Yeasted Pancakes Recipe

These incredibly easy to make, delicious yeasted fluffy pancakes are called Racuszki in Poland. The batter does need some time to rise, so you can start them first thing on a Sunday morning and the batter will be ready for frying about an hour later for breakfast. These pancakes have a wonderful yeasty flavour and taste great served with sour cream, berry jam and / or sugar. They are egg-free and can easily be made vegan by replacing the milk and sour cream with vegan alternatives of your choice.

1 1/2 tbsp sugar

To serve:
sour cream OR

Method

  • Mix the warm (but not hot) milk, vegan milk or water with the sugar, salt and yeast.
  • Wait until the yeast is activated and starts to bubble, then add the flour and mix well.
  • Cover with a damp towel and leave in a warm place to rise (about a hour).
  • Stir the batter a little before frying the pancakes in an oiled hot pan with a lid on.
  • If the batter is too runny, add 1 or 2 tablespoons of flour and allow to stand for 15 mins before frying.
  • After frying, place the pancakes on a kitchen towel to absorb the excess oil.
  • Serve with sour cream or vegan yoghurt, some berry jam if you wish, and a sprinkling of sugar.
