About Ground Ginger

Ground Ginger has a warm aroma and a fairly hot flavour. Used widely in spice blends, baking biscuits and cakes. Add to homemade ginger wines and beers, or sprinkle a little on some hot chocolate. In India it is also mixed into tea as a digestive aid.

Many traditional Christmas cake recipes recommend maturing the cake over 2-3 months, and this one is no exception, although the cake is delicious to eat right away as well. But many recipes are made with a whole host of ingredients that modern bakers today can’t use, be it for health or ethical reasons, such as wheat (containing gluten), or dairy. Our vintage Real Foods recipe allows you to cater for a modern world full of food intolerances and ethical choices that weren’t so prevalent even just a decade ago. Don't just follow this recipe ... Be adventurous and creative ... use coconut, chestnut flour, cashews, hazels, pecans, sunflower or sesame seeds, apple rings or peaches or pears ... just remember to keep proportions of dry goods and liquids correct, and do share your favourite variation with us. Parkin

Summary: Parkin is a cake that is traditionally eaten on or around the event of Bonfire Night. The recipe originates from the north of England, and whilst often associated with Yorkshire, it is also very popular in other areas of the UK, including Lancashire. Parkin can be baked hard and then allowed to soften with resting, when it also becomes more moist and sometimes sticky. It’s a tasty sweet treat to enjoy on a cold Autumn evening and is very simple to make. Our recipe uses agave syrup instead of molasses and if you wanted to make this recipe vegan, it would be very easy to use egg replacer and dairy-free butter and milk alternatives instead.
