Zesty Quinoa with Broccoli and Cashews

You will need

1/2 medium red onion chopped finely More products
1 tbsp olive oil More products
2 cloves garlic finely chopped More products
1/2 cup sun dried tomatoes in oil, drained and chopped More products
1/2 cup vegetable stock More products
1/2 cup dry white wine

2 spring onions thinly sliced More products

  • Heat oil over medium heat in a medium pan.
  • Add red onion and garlic and cook for 3 mins.
  • Add tomatoes, stock, wine and lemon juice and bring to boil.
  • Stir in quinoa and salt.
  • Reduce heat and simmer, covered, for 20 mins.
  • Arrange broccoli on top of quinoa, cover and simmer for an additional 5 to 6 mins.
  • Remove from heat and toss gently to combine.
  • Season with salt and pepper transfer to plates and serve garnished with cashews and spring onions.
