Raw Vegan Banana Camu Camu Ice Cream Recipe

Camu Camu is a cherry-like fruit that grows in the Amazonian forest and that is becoming increasingly popular for its high Vitamin C (30 times more than oranges) and antioxidant content. It is also perhaps the most popular ice cream flavour in Peru. This raw vegan twist makes for the easiest, healthiest, camu camu ice cream, without any sacrifice on taste, as frozen bananas alone taste unbelievably close to traditional vanilla ice cream. Only 2 ingredients : banana and camu camu powder ; add optional toppings of your choice.

Nibbles and Snacks

You will need

4 frozen ripe banana pieces More products
2 tsp camu camu powder More products
raw cacao nibs, optional More products
a sprinkle of desiccated coconut, optional More products

  • Mix frozen banana pieces with camu camu powder.
  • You will need a blender or a masticating juicer to make this ice cream. If using a juicer like a Champion or the GreenStar, simply process the frozen banana pieces using the blank screen.  If using a blender, allow the frozen banana pieces to soften for a few minutes at room temperature, then blend until smooth.
  • Top with raw cacao nibs, desiccated coconut or other optional toppings of your choice.
