Prune Chutney

A tasty condiment to add to all manner of things, particularly cheese.

You will need

1 teaspoon peanut oil

1 small onion, chopped finely More products
250g prunes, chopped More products
1 tablespoon freshly grated root ginger More products
2 cloves of garlic, crushed More products
1 small bay leaf More products
75g soft brown sugar More products
100ml cider vinegar (or rice wine vinegar) More products
½ teaspoons ground allspice More products
salt More products
pepper More products

  • Heat the oil in a pan over a low heat.
  • Add the onion, some salt and pepper, and all the allspice.
  • Cook for 10 minutes, or until soft, remembering to stir occasionally.
  • Add the prunes, ginger, garlic and bay leaf and cook gently for about 10-12 minutes.
  • Add the sugar and cider (or rice wine vinegar) and cook until the chutney is the consistency of a chunky apple sauce.
  • Season with salt, pepper and sugar to taste.
  • Serve warm or leave to cool.
  • This recipe will keep for several weeks in the fridge.
